The Lark Distillery has only produced whisky in Tasmania since 1992, but is securing a foothold in the state's tradition. And while many have compared Tasmania to Scotland, the comparison ends at whisky. The Lark uses the native Mountain Pepper Berry to create a unique variation. The Lark also produces interesting blends of other liquors: Pepperberry Gin, Pepperberry Vodka, Cherry Max, Apple Schnapps, and Bush Liqueur. Tours and sales are offered daily. A cafe and whisky bar, offering great views over the Hobart waterfront, is also available. Address: 14 Davey Street Hobart TAS Australia 7000
